I wouldn’t usually eat keto, but we are visiting my parents this weekend who started their keto journey earlier this year after mums brain aneurysm and dad’s diabetes scare. It’s helped them tremendously so I’ve been testing some keto treats out to take with us.

Keto Rocky Road 🍫

70% + dark chocolate 1-2 blocks
Coconut oil x1ish cups
Smooth peanut butter 2-4 Tblspn
Sugar free maple syrup 1-2 tspn
Sugar free marshmallows
Peanuts and Almonds
Freeze dried blueberries or raspberries
Sugar free gummy’s (optional)

*Melt and mix the first 4 ingredients.
*In a square tray place the last ingredients in the tray and pour the mixture over.
*Place in the fridge to set.
*Cut into squares and indulge.

Broccoli Salad (serves 2-4)

* Broccoli 1
* Red Onion 1/3
* Crispy Red Apples 2
* Feta 1/3
* Cashew Nuts
* Cranberries
* Pumpkin (optional)

Dressing (1 cup)

* Best foods Mayo 3-4 Tblspn
* Lemon 1/2
* Mustard wholegrain 2-3 tspn
* Apple Cider 1 Tblspn
* Honey tspn melted
* Smoked Paprika

1. Chop all veges and fruit.
2. Roast pumpkin (optional)
3. Lightly pan fry the broccoli so it’s still crunchy.
4. Add ingredients to a bowl when cooled down.
5. S&P and add dressing slowly - don’t drown the salad.
6. Enjoy 🤤

(I prefer my salad without pumpkin, but I had leftovers)
